Börek in Madrid
Burekisimo is Madrid’s first burek (börek) shop. Handmade, baked all day in the heart of Malasaña, and open until 5 am from Thursday to Saturday.
What is burek (börek)?
Burek, or börek in Turkish, is a golden, flaky pastry filled with cheese, meat or vegetables. It was born in the kitchens of the Ottoman Empire and travelled across the Balkans, the Middle East and beyond.
In Turkey it’s a breakfast classic. In the Balkans it’s what you eat on the way home after a night out. It’s not an empanada, not a pizza and not puff pastry: it’s burek.
We make ours by hand every day, with virgin olive oil and butter only (no refined oils, no margarine), and every burek carries 160 g of filling.
Pick your filling
- Cheese: Bulgarian white cheese, cream cheese and melted mozzarella (vegetarian)

Burek of the month: Mexicanisimo, with beef, chipotle, mozzarella and sweet corn.
Make it a Burek Combo: your burek with 5 extras (pickles, olives, ajvar, tahini, chimichurri, Greek yogurt and more) and a drink.
Burek from €6.50 · Burek Combo from €11
Try it with homemade ayran
Ayran is the classic drink with burek in Turkey and the Balkans: cold yogurt, water and a pinch of salt. We make ours in-house every day.
Fresh, light and slightly salty, it’s the perfect match for a hot burek, and a great way to rehydrate after a long night.
